Just like N°25, the Edge Profile N°3 is a witness of the transition towards a simpler style from the geometric perspective; as curves moved into lines. Then (between 1905 and 1920), with the new building permissions within Paris itself, many neighborhood bistrots opened. In most cases, this happened in street corner buildings, as in the Faubourgs district for example.
This is how ‘Le Drapeau’ was opened, its arc of a circle countertop reminds us of a time when artisans came seeking warmth, had a coffee with liquor, and grabbed a snack around 10:30… The interior architecture of this bistrot in “Le Marais” showcases the 1910s and 1920s, even if several angles of the decor and layout are testimonies of the trends that succeeded one another ever since the post-war period.
One can also dwell into this melting pot atmosphere in the very French ‘Lugdunum Bouchon Lyonnais’ in Tokyo, where excellence and delicacy of the dishes served are not contradictory with the warm welcome, without mentioning a sublime wine selection.
