The largest of our edge profiles ! A symbol of the grandeur of Parisian brasseries. In 1860, phylloxera damaged the French vineyards, causing wine prices to soar. Beer, previously reserved for the North and East of France, was then substituted. It arrived by train from Belgium, Lille, and Alsace. With beer, Paris democratized traditional local dishes, such as choucroute.
After the defeat of 1870, when Alsace became German, many Alsatians came to try their luck in the capital. Large brasseries then emerged near the train stations, such as " Terminus Nord " which was completely renovated by architect-designer John Whelan for the Groupe Bertrand.
The decor is breathtaking and grandiose: royal blue leather benches, trompe l'oeil marquetry, wall mirrors, and a majestic tin Countertop with Edge Profile N°27. This majestic touch can also be found at the bistro « Le Valois " opposite the Ministry of Culture or at the legendary " Chez Miocque " in Deauville.
