This Edge Profile symbolizes the greatness of Parisian brasseries. In 1860, the phylloxera damaged French vineyards and the price of wine drastically went up. Imported from Belgium, Lille or the Alsace region by train, beer became the new favorite to accompany traditional meals such as “choucroute” which grew in popularity.
After the military defeat in 1870, when Alsace became German, a number of Alsatians fled to Paris and tried their luck in the capital. Large brasseries then opened, at first close to train stations. ‘Terminus Nord’ was one of them and was entirely renovated by the architect-designer John Whelan for the Groupe Bertrand.
The setting is breathtaking and amazing. It features royal blue leather booth seats, trompe l’oeil marqueteries, mirrors on walls and a magistral pewter countertops with the n.27 edge profile. It echoes the majestic aspect at the ‘Le Valois’ bistrot, facing the Ministry of Culture, or the mythical ‘Chez Miocque’ in Deauville.
